Viticulture and Winemaking

Our vineyard is located at the Northern Reach of the Sunbury Wine region on an elevated North-Facing Escarpment towards Mount Macedon. Whilst the Sunbury region is historically famous for shiraz, our windswept and marginal cool-climate site is perfect for growing precise and pure mineral expressions of Chardonnay, Pinot Noir and Sangiovese.

Our Vineyard is one of relative youth with the first vines being planted in 2017 and more vineyards being planted to this day, now showcasing further varieties suited to our special site, including unique interpretations of some of Italy’s most noble varieties such as Fiano, Nebbiolo, Pinot Bianco and Montepulciano.

We take an uncompromising approach to the growing and making of our wines, with our vineyards tended entirely by hand, focusing on capturing high quality, delicate but intensely flavoured exemplars of cool climate wine. Every wine is made from hand-picked, estate grown fruit and treated with a gentle and minimal hands-off approach. We utilise gravity at every opportunity to retain the natural character of our wines, ensuring they reflect the nature of our site and the season they were grown in.

To aid in this endeavour, we have recently built a state-of-the-art winemaking facility on site, which has enabled us to delve even further into the detailed nature of our vineyard. Allowing to produce even smaller batches of unique wine expressions that capture the purity, minerality and refreshing nature of our vineyard.
